Bourbon Chicken

Ingredients

    2 lbs boneless chicken breast, cut into bite-size pieces
    1-2 tablespoon olive oil
    1 garlic clove, crushed
    1/4 teaspoon ginger
    3/4 teaspoon crushed red pepper flakes
    1/4 cup apple juice
    1/3 cup light brown sugar
    2 tablespoons ketchup
    1 tablespoon cider vinegar
    1/2 cup water
    1/3 cup soy sauce

Directions

Directions
Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes.
Serve over hot rice and ENJOY.

  • Oh... my... god. This was amazing. Very similar to the honey chicken my hubby loves. I simmered the liquid for 10 min, added the chicken raw (dark meat), and then boiled the heck out of it until the sauce turned thick and the chicken browned a bit. I also used low sodium soy. This is a keeper! - 8/24/13

  • I love this recipe for bourbon chicken. I use 1/2 of the soy sauce called for, to reduce the sodium level. If you must, serve soy sauce on the side. - 5/27/12

  • It was delicious, but incredibly salty. I will make this again with low-sodium soy sauce to see if it makes a difference. Discounting the saltiness, the flavor was quite delicious. (I did cheat and substitute bourbon for the apple juice. It is bourbon chicken, after all!) - 5/12/12
