Scallop Linguine

Number of Servings: 8

Ingredients

    1/2 pound of fresh or frozen scallops already cleaned.
    14.5 oz can of Whole Peeled Tomatoes
    3 cloves garlic (minced)
    1/2 large sweet onion (chopped)
    1 tbls olive oil
    2 tbls white wine vinegar
    Italian herb mix
    Paprika
    Salt
    Pepper

    Linguine pasta

Directions

Start pot of water to boil and cook the pasta.
In a 2quart pot warm oil over a medium heat. Add minced garlic, onion and Italian herbs until onions are look a little transparent. Add the tomatoes and smoosh them with a fork until it resembles a lumpy sauce. Add Vinegar, paprika, salt and pepper. Add scallops. Stir them in and wait for the sauce to bubble turn down heat and simmer covered for a minute or two, until scallops are opaque.

Place pasta on dishes and ladle the scallops and tomato sauce over the noodles. Enjoy!
