1-6oz. can Albacore in water 2-hard boiled eggs (chopped) 1/2 cup celery, chopped 1 tbsp chopped shallots (or onion) 4 tbsp light mayonnaise 2 tbsp stone ground mustard salt&pepper to taste
This recipe can be modified to whatever suites your taste or whatever you have handy. If you don't like celery...leave it out! Just combine all ingredients and toss together lightly. This makes a great lunch served over a huge pile of shredded lettuce. You could also use this as a sandwich spred served on bread, crackers or rice cakes.
