Introduction

this is a weight watchers version and is full of flavor. Great on its own or with grilled meat of any kind this is a weight watchers version and is full of flavor. Great on its own or with grilled meat of any kind
Number of Servings: 4

Ingredients

    3/4 cup crumbled feta cheese
    2 tablespoons fresh lemon juice
    1 teaspoon olive oil
    1 garlic clove crushed
    1/2 teaspoon dried oregano crushed
    1/4 teaspoon fresh ground pepper
    1 medium green pepper seeded and cubed
    3 cups torn romain leaves
    1 tomato seeded and cut into wedges
    1 english cucumber sliced and halved
    1/2 red onion thinly sliced
    6 large greek olives pitted and sliced

Directions

1. prpare dressing, combine cheese, lemon juice oil, garlic, oregano, ground pepper and 2 tablespoons water; puree.
2. in a large salad bowl, combine lettuce, tomato, cucumber and onion. Drizzle with the dressing; toss to coat. Sprinkle with the olives.

Makes 4 servings
