Vegetable Broth, 4 cups
Lemongrass, 3 stalks chopped into 2" pieces
Broccoli, fresh, 1 bunch, chopped into florets
Bean sprouts, 1 cup
Garlic, 3 cloves minced
Green Onion (Bunch), chopped
Rice Noodles, one bundle
Red Chili Paste, 2 tbsp
Soy Sauce, 1 tsp
Granulated Sugar, 2 tsp
1. Bring vegetable broth to a boil. Reduce to medium heat to simmer, add the lemongrass to the broth. Simmer for 5 minutes. At the same time, steam broccoli florets and bean sprouts.
2. After five minutes, remove the lemongrass stalks from the soup broth.
3. Add the chili paste, soy sauce, and sugar to the broth. Add the noodles, garlic, onions, steamed broccoli and sprouts. Bring heat back up to high, bring soup to a boil.
4. Once the soup has been brought back to a boil, remove from heat and serve.
