Cucumber and tomato salad

Introduction

A Serbian friend introduced me to the pleasure of this salad. It's perfect on a hot, summer day. A Serbian friend introduced me to the pleasure of this salad. It's perfect on a hot, summer day.
Number of Servings: 8

Ingredients

    1 large cucumber
    1.5 cups baby plum tomatoes, halved or quartered
    3 oz reduced fat feta cheese, crumbled
    1.25 Tbsp extra virgin olive oil
    2 Tbsp fresh basil, chiffonade
    3 cloves roasted garlic
    salt and pepper to taste

Directions

Chop cucumber and tomatoes. Place in medium bowl and set aside. Whiz garlic and oil in mini food processor or blender. Pour over vegetables. Crumble feta over top. Add fesh basil and salt and pepper to taste. Lightly toss to mix. Makes 8 1/2 cup servings. Can be served chilled or at room temperature.
