Ingredients

400g can sweetened condensed milk (skim)
250g organic rolled oats (not instant)
75g shredded coconut
100g dried cranberries
100g unsalted peanuts
100g mixed seeds (pepitas, sesame, sunflower seeds pine nuts)
Directions
Preheat oven to 130 degrees Celcius and line a 23x33cm baking pan with baking paper. Warm condensed milk in a pan. Mix all other ingredients in a large bowl. Fold condensed milk into dry ingredients and spread into the tin. Press into tin and flatten surface. Bakd for one hour then remove and allow to cool for about 15 minutes before chopping into 16 chunky bars. Let cool completely then store in airtight container.

These bars are addictive! So quick and easy to make, chocked full of vitamin E and iron and trace minerals. I use almonds in place of peanuts, and add 1/2 cup of mini chocolate chips. I also have found it is not necessary to heat the milk, just make a well in the center.
