350g smoked cod
2 bay leaves
small sprig parsley
1 tsp peppercorns
375 ml water
80 ml white wine
2 x 410g cans cannelini beans drained and rinsed
2 tbs chopped parsley
1 tbs chopped chives
lay fish fillets in frying pan with water, wine, parsley sprigs, peppercorns and bay leaves. Bring to boil and cover with foil and simmer 3-5 mins. Remove from heat and wrap fish in foil to keep warm. Tip out all but 60 -100 ml of liquid and add cannelini beans to pan and warm for 3 mins. Add fish, parsley and chives and stir, breaking up fish.
Season with salt and pepper as desired. I served this with steamed baby bok choy.
