RAD Red Pepper Hummus

Introduction

delish hummus, healthy and super tasty! this was a huge hit at the last party I took it to...I have made hummus before and it never had that addictive-ness i love about GOOD hummus. SO i researched, added MORE garlic, tahini, and red peppers for a great flavor! Ingredients

    1/2 tsp olive oil
    1 red pepper, sliced into strips
    2 green onions, chopped
    2 cans of chickpeas (15 oz) drained
    5+ garlic cloves, (or 4 tsp pre minced garlic)
    1/2 cup tahini (sesame paste...by the peanut butter at health food stores)
    1 tsp salt
    dash cayenne
    3 tablespoons lemon juice (or juice of 1 small fresh lemon)
    1-2 tablespoons water
    *extra virgin olive oil


Directions

Put olive oil in nonstick pan and grill red pepper until soft, fragrant, and a little blackened (10 minutes). Set aside.
Put following ingredients into food processor~
2 cans chickpeas (DRAINED), garlic, lemon juice.
Blend 2-5minutes, until no large chickpeas are visible
add Tahini, salt, cayenne pepper, water
blend another minute or 2 until smooth and creamy, consistancy of peanut butter. add more water if desired.
Toss in red peppers and green onions and blend another minute or so.
Transfer to bowl. Cover and refrigerate for at least 1 hour.
Drizzle with extra, virgin, olive oil before serving with pita chips, assorted veggies, or sliced whole grain pita bread!
