1 cup almond or cashew or brazils (any fatty nut)
zest 1 lemon
.5 cup lemon juice (2 lemons)
1 c shredded coconut (or pulp from milk)
3 dates (or .25 cup agave)
Grind nuts in food processor, incorporating some of the lemon juice as needed. Mix in remaining ingredients to form batter.
Drop spoonfuls on dehydrator sheet and dehydrate to taste(approx 12 hours)
Makes about 10 cookies
