Number of Servings: 6

Ingredients

    1 Tablespoon cinnamon
    1 Tablespoon cumin
    1 teaspoon nutmeg
    1 Tablespoon olive oil
    2/3 cup onion
    6 boneless skinnless chicken thighs
    1 cup pomegranate juice
    1 cup walnuts
    1 cup yellow squash

Directions

Ugly Good Chicken container: Ziplock

Put on gloves.
In a small bag add:
1 Tablespoon cinnamon
1 Tablespoon cumin
1 teaspoon nutmeg
1 Tablespoon olive oil
2/3 cup onion
In large bag with chicken thighs add:
1 cup pomegranate juice
1 cup walnuts
1 cup yellow squash
Seal bag, removing as much air as possible and massage to mix.

Label bag
Remove and discard gloves.
Store pan in cooler.
Wash hands and proceed to next station.
Quick Time Meals
Ugly Good Chicken
In saute pan over medium heat place the content of the bag with the onion, olive oil and spices. Saute content until onions are soft , about 2 minutes. Place chicken in the skillet with the pomegranate juice and walnuts. Simmer about 20 minutes, until chicken is cooked and sauce has thickened. Serve with rice or couscous and cooked carrots.
