IntroductionA Wonderful Soup for when you have a head cold A Wonderful Soup for when you have a head cold
2 tbsp Olive Oil
2 Cups cubed french bread (whole wheat)
One head of fresh garlic (8-9 cloves)
5 Cups Low-fat , low sodium chicken broth
.5 tsp Cayenne pepper
Salt, to taste
Fresh Parsley or Parmesan Cheese (optional)
Thinly slice garlic cloves.
In a heavy soup pot, add olive oil and cook garlic and bread cubes until brown, 3-5 minutes. Add cayenne and salt to taste. Cook another 1-2 minutes. Add chicken stock and bring to a boil. Turn heat down and simmer 15 minutes. Puree soup using an immersion blender, or by ladeling into a traditional blender. Serve sprinkled with fresh parsley or parmesan cheese.
