Asparagus Chicken Stir Fry

Introduction

Chicken with stir-fried asparagus - easy and nutritious! Chicken with stir-fried asparagus - easy and nutritious!
Number of Servings: 4

Ingredients

    1 Tbsp oil, divided
    1/4 tsp ground ginger
    3 boneless skinless chicken breasts
    1 bunch asparagus, woody base removed
    2 green onions, sliced
    1 pinch salt

    you can add mushrooms if you want!

Directions

Heat 1/2 tablespoon of the oil with the ginger in a non-stick pan. Add chicken. Stir constantly for 5 minutes. Remove chicken from pan.


Add remaining 1/2 tablespoon of oil to pan. When heated, add asparagus. Stir-fry for 2 minutes. Add green onions and mushrooms. Stir constantly for 1 to 2 minutes.


Return chicken to pan. Add salt. Cook a further 3 minutes.

  • I had been worried that this would be lacking in flavor, but that was not a problem-this was tasty and healthful. I highly recommend adding mushrooms,also using cooking spray as you add ingredients.I made rice to go with it, but the stir fry was fine without it. - 6/16/08
