My Meatloaf

Introduction

Ingredients

    2 lb ground beef, 1 lb Italian sausage, Progresso Italian Style bread crumbs, 2 eggs, 1 to 2 cans Hunts Diced Tomato with Basil, Garlic, and Oregano, 1 can tomato paste, oregano, basil, thyme, rosemary, garlic (minced), onion (chopped), 1 - 3 stalks celery (chopped)

Directions

Put meat, eggs, celery, onion, garlic, tomato paste, and 1 can of tomatoes into a bowl. Mix well. Add herbs to taste. Add bread crumbs to hold it together. Bake at 350 until done.

This recipe should make at least 2 loaves approximately 20 slices. I frequently make baseball size meatballs and bake them on the broiler pan so the grease drips away. I then freeze the meatballs usually 2-3 per quart bag. This is great for me since I am single. I can use a meatball for my meatloaf, spaghetti or a sub. I also use the meatballs when making lasagna since they are precooked they will not add grease to the lasagna. I simply slice them so that they are not so big.
