Summer Squash Sauté

Number of Servings: 4

Ingredients

    2 zucchini, sliced
    2 yellow squash, sliced
    1 Tbsp extra virgin olive oil
    ½ cup shredded low-moisture part skim mozzarella cheese
    2 Tbsp fresh basil
    2 Tbsp grated low fat parmesan cheese

Directions

Cook zucchini and squash in hot oil in large skillet on medium heat for 3-5 minutes stirring occasionally. Add garlic; cook another 3-5 minutes or until vegetables are crisp tender.
Remove from heat, stir in mozzarella and basil.
Sprinkle with parmesan.
Makes 4 3/4-cup servings
