Chicken and Veggies with Couscous

Introduction

I actually adapted this from another recipe I got off SparkRecipes. I add more veggies so I could increase the servings. I needed to feed more people. Number of Servings: 6

Ingredients

    1 cup couscous
    1 1/2 cup chicken broth
    1 pound boneless/skinless chicken breasts, cooked and diced
    1 tsp olive oil
    1 cup diced onions
    1 cup diced bell peppers (any color)
    1 cup diced carrots
    1 cup diced zucchini
    1 cup sliced fresh mushrooms.

Directions

Prepare the couscous according to the package directions with the chicken broth (instead of water). Meanwhile, in a skillet, heat up the oil and sautee the vegtables. Add in the diced chicken to heat through, and serve over the couscous. Makes 6 servings.
