Vegetarian Taco Chili

Introduction

A modified version of a taco bake recipe. A good vegetarian chili. Can serve as a chili, a baked casserole with FF cheddar on top or use as a dip or taco filling. Very versatile. A modified version of a taco bake recipe. A good vegetarian chili. Can serve as a chili, a baked casserole with FF cheddar on top or use as a dip or taco filling. Very versatile.

Ingredients

    1 pkg boca crumbles
    .5 cup diced onion (or more--never can have too many onions)
    .5 cup diced red pepper (or more--yellow or green work too).
    1 can black beans, drained (can also use pinto)
    1 packet taco seasoning (I use hot & spicy)
    2 8 oz cans tomato sauce

Directions

Brown crumbles, onion and peppers.
Add tomato sauce, beans and taco seasoning and mix thoroughly.
Simmer about 30 minutes. Can also put in a casserole dish and bake for 10 minutes at 375, can top with FF cheddar cheese and bake for 5 more minutes. Adjust calories for add-ons.
Serve with FF cheddar cheese on top, or salsa and a dab of FF plain yogurt or FF sour cream.
Serves 8.
