Chicken Salad with cranberries

Introduction

A great fix-ahead chicken salad recipe, with sweetness, crunch & chewiness all combined. A great fix-ahead chicken salad recipe, with sweetness, crunch & chewiness all combined.
Number of Servings: 12

Ingredients

    4 large chicken breasts (approx 2 lbs), cooked and cubed
    1 cup chopped celery
    2-3 green onions, chopped
    1 cup red seedless grapes, cut in half
    1 cup dried cranberries
    1 cup mayonnaise
    1/2 tsp Lawry's season salt
    1/2 tsp Mrs Dash Garlic & Herb blend
    1 cup chopped pecans, lightly toasted

Directions

Combine the chopped chicken in a large bowl with the onion, celery, grapes and cranberries. In a small bowl, mix the seasonings into the mayonnaise, then fold into the chicken mixture, coating pieces well. Chill several hours or overnight. Right before serving, add the pecans.

Makes approx 12 1/2-cup servings
