Mushroom Veggie Delight

Introduction

I love sauted mushrooms and onions so I started my recipe there and added other items to make it a more well balanced meal. This recipe is for 2 dinner plate sized servings. I love sauted mushrooms and onions so I started my recipe there and added other items to make it a more well balanced meal. This recipe is for 2 dinner plate sized servings.
Number of Servings: 2

Ingredients

    16 oz Mushrooms sliced
    2 tbsp Olive Oil
    1 medium sized onion
    10 Medium length Asparagus Spears chopped
    2 cups Broccoli Florettes
    1 cup chopped sweet pepper-red,yellow,orange mixed
    2 or 3 cloves of Garlic
    6 dashes of salt

Directions

Saute 16oz of Mushrooms in 1 tbsp Olive Oil add a dash of salt after the addtion of each new item. When mushrooms have cooked down and the liquid started to evaporate add 1 onions sliced in the half moon shape, 2 or 3 garlic cloves minced. Cook until mushrooms are starting to brown and onions are softened and starting to brown. Add an addtional 1 tbsp of Olive oil Add 2 cups Broccoli Florettes, 10 spears of Asparagus chopped into medium sized pieces, and 1 cup of chopped sweet peppers. Cook until fork tender. Divide into 2 portions and sprinkle with cheese right before serving.
