1 1/2 cup water 1/2 cup white wine 4 green onions, chopped 1 bay leaf 1 lb boneless skinless chicken halves (4 oz each) 1/8 tsp nutmeg 1/4 cup shredded part skim Mozzarella cheese
In a large skillet, bring to a boil the water, wine, green onions and bay leaf; gently add chicken breast halves and bring back to a boil. Reduce heat, cover and simmer for about 10 minutes or until chicken is cooked through. Preheat oven broiler. While chicken is poaching, cook frozen spinach according to package directions; drain and stir in nutmeg. Place chicken in a metal pan, top with spinach and sprinkle with cheese; broil for about 1 minute or until cheese is melted.
