1 lb. lentils
1 large onion, peeled & chopped
3 cloves of garlic, peeled & chopped
1 28-oz can whole tomatoes
2 stalks celery, choipped
2 or 3 large carrots, peeled & chopped
2 Bay leaves
Salt & Pepper
1 head of kale, washed and chopped
Shortly before serving add kale & seasonings to taste. Turn to high and cook just until greens are wilted. You can use other greens in this, including extra romaine lettuce if you need to get rid of some.
