Chickpea spinach soup

Introduction

This soup is highly addictive but depends on the quality of broth used. Only add soy sauce to taste in case your broth is very salty. This is best eaten right away because by the next day the spinach has turned brown and is less appetizing. This soup is highly addictive but depends on the quality of broth used. Ingredients

    1 onion, sliced into half rings
    1.5 Tbsp olive oil
    1 cup sliced mushrooms
    1/4 tsp black pepper
    1/4 tsp red pepper flakes
    1L veggie broth
    2 cups chickpeas, drained and rinsed
    2 Tbsp lemon juice
    3 Tbsp soy sauce (or to taste)
    2 to 3 cups fresh spinach, stems removed

Directions

Saute onion in oil over medium-low heat until translucent. Add mushrooms, black and red pepper, and saute until mushroom liquid reduces. Add broth and chickpeas. Bring to a boil then reduce heat and simmer for 20 minutes. Stir in lemon juice, soy sauce, and spinach. Turn off heat, cover, and let sit for 3 or 4 minutes to wilt spinach.
