1/2 lb. of 1 pound box pasta
1 package Smart Strips - Chick'nÂ® (vegan)
1/2 package Smart BaconÂ® (Vegan)
1 1/2 c. broccoli flowerets cut into bite-sized pieces
1 red pepper, sliced in long strips
1 small onion, sliced in long strips
2 cloves garlic, minced
1 tbsp. olive oil or cooking spray
Vegan Parmesan cheese
Cook pasta according to package directions.
In a large skillet, sautĂ© broccoli, onion and red pepper in olive oil for 2 minutes. Add garlic and sautĂ© 1 minute longer (do not over cook). Brown Smart Bacon in another skillet until crispy and break into bite-sized pieces. Add Smart Strips - Chick'nÂ® and Smart BaconÂ® to the sautĂ© mixture, cooking just long enough to heat through. Serve over pasta.
Sprinkle with fresh Vegan Parmesan Cheese.
