2 1/2 cups whole grain flour such as buckwheat
1 Tbs raw sugar
4 tsp, low sodium baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 egg plus 2 egg whites
1 1/2 C skim milk
1 Tbs oil
1 tsp vanilla
separate egg yolks and whites
beat eggs whites until stiff
mix egg yolk, milk, vanilla and oil with wire wisk
In separate bowl, sift together flour, sugar, baking powder, cinnamon and salt.
Mix milk mixture and dry mixture together just until moist.
Fold in egg whites.
Using a ladel, make fist-size pancakes on electric griddle.
one serving = 4 medium pancakes or 200 grams
