Introduction

I made this in Malawi whenever I could get my hands on pasta (doesn't have to be just rotini) It lasted a long time and was a taste of 'home' for me. Can be lower in calories if you have access to splenda. I made this in Malawi whenever I could get my hands on pasta (doesn't have to be just rotini) It lasted a long time and was a taste of 'home' for me. Can be lower in calories if you have access to splenda.
Number of Servings: 12

Ingredients

    12 oz rotini
    1c green pepper diced
    1 carrot shredded
    2c broccoli florets, small
    1c onion diced
    1 cucumber peeled, seeded and chopped
    salt and pepper to taste
    .75c sugar
    .5c vinegar
    .25c oil

Directions

Cook pasta according to directions. Drain and rinse in cold water. Add all the other ingredients. Chil 2-3 hours, stirring occassionally.
