Tina's Hominy Meatball Spicy Soup

Ingredients

1 pound lean ground beef
1 egg, lightly beaten
1/4 cup onion, chopped finely
1/2 cup corn meal
1/2 teaspoon salt
1/8 teaspoon pepper
2 cans hominy, rinsed and drained
1 can diced tomatoes with chilis (preferably Muir Glen fire roasted)
1 can plain diced tomatoes (preferably Muir Glen fire roasted)*
2 cans tomato sauce
2 cups water
1 envelope taco mix (Preferida, or other brand with no trans fat)
*can use two cans tomatoes with chilis instead of one with chilis and one plain, for extra spiciness!
Directions
Make meatballs: combine ground beef, onion, beaten egg, salt, pepper, corn meal and shape into meatballs. Bake at 400 degrees for 20 minutes.
Meantime, in Dutch oven or soup pot, bring to boil hominy, tomatoes, tomato sauce, water and taco mix. Add cooked meatballs and cook for 30-40 minutes
