Vegan Gumbo with Brown Rice

Introduction

A hearty, filling meal for a cold winter's day or a day when you come in from sailing! A hearty, filling meal for a cold winter's day or a day when you come in from sailing!
Number of Servings: 6

Ingredients

    3 tbsp olive oil
    3 tbsp flour
    1 cup diced onion
    1 cup diced celery
    1 cup diced green bell pepper
    2 cloves of crushed garlic
    1 tsp ground cumin
    1/2 tsp cayenne pepper
    1 tsp fresh thyme (diced)
    1/4 cup tomato paste
    2 cups of diced tomatoes
    4 cups of vegetable broth
    1/2 cup brown rice
    2 cups sliced okra (drained well)
    Salt and pepper to taste.


Directions

Makes 6 large servings

Combine the oil and flour in a medium size pot and set over medium heat. Cook, stirring frequently, until the mixture is golden brown, about 3 - 4 minutes.

Add the onion, the celery, the green peppers, the garlic, the cumin, the cayenne and the thyme and cook for 2 - 3 minutes to blend the flavours.

Mix in the tomato paste and then very slowly mix in the diced tomatoes. Add the vegetable stock and the brown rice and bring to a simmer.

Simmer the soup until the rice is cooked through, about 20 minutes.

Add the okra and cook 3 - 4 minutes more.

Thin the gumbo with a bit more stock if you find it too thick and then serve in bowls garnished with fresh parsley and sprinkled with some vegan parmesan cheese.
