Vegan Maple Candied Ginger Loaf

A sweet and spicy loaf made completely without eggs.

Ingredients

2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp fresh ground cinnamon
1/3 cup crystallized ginger (coarsely chopped - see note)
3/4 cup walnut pieces
3/4 cup maple syrup (grade 3)
3/4 cup almond milk
1/4 cup orange juice
1 dash of olive oil
1 tsp pure vanilla extract
Directions
Makes 12 good size portions
Preheat the oven to 350 degrees F. Grease a 9" x 5 " loaf pan with a light spray of olive oil. Cut a piece of parchment paper to fit the bottom of the pan and set it in place.
Place the flour, baking powder, baking soda, salt and fresh ground cinnamon in a bowl and whisk to combine.
Mix in the cyrtalized ginger and the walnut pieces.
Place the maple syrup, almond milk, orange juice, olive oil, and vanilla in a second bowl and mix to combine.
Spoon the batter into the pan.
Bake for 40 - 45 minutes or until the loaf springs back when gently touched in the centre.
Note. Crystalized ginger can be made by combining fresh grated ginger with maple syrup and lightly baking it until it is crystalized.
