Mom's Potato Salad

Introduction

this is my mom's recipe and it's absolutely fantastic. So not good for you, but it tastes yummy!! this is my mom's recipe and it's absolutely fantastic. So not good for you, but it tastes yummy!!
Number of Servings: 25

Ingredients

    5 lb. potatoes, boiled and skinned
    1 (24 oz) Jar Lite Mayo
    12 slices bacon crumbled
    6 large hardboiled eggs, chopped
    1 cup diced celery
    1 cup chopped onion
    1/2 cup bacon grease
    1/3 cup dill pickle juice

Directions

Cook potatoes until done, drain and let cool for a few minutes. Peal the potatoes, dicing each one afterwards. Add your crumbled bacon, chopped hard boiled eggs, celery and onions to the potatoes. Next add mayonaisse, then bacon grease and pickle juice. Mix thoroughly and season with salt and pepper to taste.

Serving size is 1/2 cup, and it feeds 25 people.
