Mini Breakfast Omelets

Introduction

Needed something I could grab and go for breakfast. You can change this up and add almost anything you wish to your mini omelet. Make them up at night - Take them for Breakfast the next morning. Needed something I could grab and go for breakfast. You can change this up and add almost anything you wish to your mini omelet. Make them up at night - Take them for Breakfast the next morning.

Ingredients

    5 Large eggs
    2 Large mushrooms chopped, saute
    4 Slices bacon, cooked and crumbled
    .25 Cup Shredded cheese
    Salt/Pepper

Directions

Preheat oven to 350.
Spray 6 of the cupcake tin with cooking spray.
Cook bacon, crumble and let cool. While bacon is cooking, chop up mushrooms and saute till soft, let mushrooms cool. Put cooled bacon and mushrooms in bowl and add shredded cheese, combine together. Beat eggs in separate bowl. Distribute the bacon mixture in the cupcake tins. Pour egg over bacon mixture. Sprinkle with shredded cheese. Bake for 15-20 minutes. Let cool before removing from pan.
