Vegetable Shell Pasta Salad with Olives

Introduction

Number of Servings: 8

Ingredients

    1 package Eden Organic Vegetable Shells
    1 large red onion, sliced into half moons
    1 bell pepper, chopped
    2 garlic cloves minced
    2 teaspoons olive oil
    1 can diced tomatoes
    8 green olives, sliced
    1/2 cup herbs of choice (basil, dill etc)
    dressing:
    1/3 cup red wine vinegar
    1/4 cup olive oil
    2 tablespoons lemon juice
    salt and pepper to taste

Directions

Cook pasta according to package. Drain and rinse.
Cook onion, peppers and garlic in 2 teaspoons oil in medium hot skillet until soft. Combine in large bowl with pasta.
Blend together 1/4 cup olive oil, lemon juice and vinegar.

Changing up the pasta, vinegars and citrus would make wide range of variations.

Makes 8 one cup servings
