Turkey Barley Soup

Number of Servings: 10

Ingredients

    1 T Olive oil
    4 oz. Ground Turkey or Turkey Breast
    1/2 C chopped onions
    1 clove garlic, minced
    7 C Water
    1/2 C celery, diced
    1/2 C carrots, diced or strips
    2 tsp. or 2 packet bouillon cubes
    1/2 T basil
    1 Bay Leaf
    1/2 C canned peas
    1/2 C raw carrots, diced
    2 C Rotel tomatoes
    1 1/2 C Petite Diced Tomatoes
    Dash Black Pepper

Directions

Brown and crumble turkey meat on medium in a saucepan with onions and olive oil. Set aside to cool. In a crock pot, add meat mixture and all other ingredients. Cook on low for 6-8 hours or overnight.
Very Easy and tasty - even the little ones liked in my house.
