Introduction

This is a hearty soup, thick much like a stew. I tend to be heavy on the veggies when I make it, so it serves at least 2 suppers and 2 lunches. This is a hearty soup, thick much like a stew. I tend to be heavy on the veggies when I make it, so it serves at least 2 suppers and 2 lunches.
Number of Servings: 10

Ingredients

    1 lb lean ground beef
    3/4 cup barley
    1 cup chopped onion
    2 bay leaves
    2 cups sliced carrots
    1 cup frozen (or fresh) peas
    1 - 10oz can tomato soup
    1 - 28oz can diced tomatoes(I like to use crushed)
    1 tsp thyme
    1/2 tsp pepper
    2 garlic cloves minced
    1 tsp parsley(dried)
    Beef Bouillon, 2 cups(2 tbsp + 2cup water)
    3 cups water

Directions

1 brown and drain(and rinse if you like) ground beef.

Put beef and remaining ingredients into crock pot. cook 3-4 hours on high. Or, 5-7 on low.
