Char's Turkey Meatloaf

A flavorful, veggie-packed meatloaf that everyone can enjoy! A flavorful, veggie-packed meatloaf that everyone can enjoy!Number of Servings: 6
Ingredients

1 lb. ground turkey
1 egg
1/2 c. dry breadcrumbs
1 c. finely diced onion
1 zucchini
1 medium carrot
1 sm. can tomato paste OR 1/2 c. ketchup
Thyme
Salt
Pepper
Directions
Heat oven to 350.
Grate carrot and zucchini into mixing bowl. Add remainder of ingredients (use salt, pepper, thyme as desired). Mix thoroughly to incorporate all ingredients.
Shape into glass loaf dish (9x5) and bake at 350 for 45-50 minutes, or until cooked through. Carefully drain juices, then let meatloaf to cool for 10-20 minutes to set up before serving.
One serving is about 1/6 of the loaf.
My boyfriend loves to take the leftovers in a meatloaf sandwich!
