Light and Lemony Muffins

Ingredients

    1 1/4 c. milk
    1/2 c. plain or vanilla yogurt
    Grated rind of 2 large lemons
    2 T. Lemon Juice
    2 c. White Flour
    1 c. Whole Wheat Flour
    2 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    pinch ground nutmeg
    2/3 c. brown sugar
    1 egg
    1/4 c. applesauce
    1 tsp. vanilla

Directions

Preheat oven to 400 degrees. Grease muffin tin. In a medium bowl, whisk together milk, yogurt, lemon rind, and juice; let stand for 5 minutes. In seperate large bowl, combine flours, baking powder and soda, salt and nutmeg. Whisk sugar, egg, applesauce and vanilla into milk mixture. Pour over dry ingredients and stir just until moistened. Spoon into prepared muffin pan.

Bake for 20-25 minutes if using regular muffin tin.
Bake 10-12 minutes if using a mini-muffin tin.

Makes 12 large muffins or 48 mini-muffins.
