1 1/4 cups of water
1 cup couscous
3 tablespoons extra virgin olive oil
1/2 cup sun-dried tomatoes (drained and finely chopped)
2 tablespoons fresh basil (chopped)
10 pitted black olives
2 garlic cloves (crushed)
Dash of salt to taste
Dash of fresh ground black pepper to taste
1 teaspoon finely grated lemon zest (from the outside of the lemon)
2 tablespoons of fresh lemon juice (squeezed lemons)
Bring the water to a boil. Stir in the couscous, cover and remove from the heat and let stand for 5 minutes.
Spoon the couscous into a medium bowl and mix in 2 tablespoons of the olive oil, the tomatoes, the basil, the olives, the garlic, the salt, the pepper, the lemon zest, and the lemon juice.
