Vegan Cucumber and Peanut Salad

Introduction

Nice side dish with all meals. Nice side dish with all meals.
Number of Servings: 4

Ingredients

    1/4 cup fresh squeezed lime juice
    1 tablespoon extra virgin olive oil
    2 teaspoons granulated sugar
    1 tablespoon Thai chili sauce
    2 teaspoons fresh ginger (finely grated)
    1 large cucumber (thinly sliced)
    3 medium shallots (finely chopped)
    1/2 cup unsalted, roasted peanuts (coarsely chopped)
    1 tablespoon fresh cilantro (chopped)

Directions

Makes 4 large servings

Place the first 5 ingredients in a salad bowl and whisk to combine the flavours.

Add the remaining ingredients and toss to combine.

Let the flavours melt at room temperature for about 10 minutes.

Gently toss the saldd again and then serve it.

Your children and guests will love it.
