Ingredients

    1 MEDIUM SUMMER SQUASH
    1 MEDIUM ZUCCHINI
    1 SMALL RED ONION
    2T OLIVE OIL
    DASH OF SALT AND PEPPER
    1T TARRAGON

Directions

SLICE THE SQUASH, ZUCCHINI AND ONION. USE A RED ONION FOR BETTER FLAVOR AND COLOR. HEAT OLIVE OIL IN A MEDIUM SAUTEE PAN. ADD ALL OF THE INGREDIENTS. COOK TILL THE VEGGIES ARE SLIGHTLY SOFT ON MEDIUM TO HIGH HEAT. SERVE HOT AND ENJOY. LEFTOVERS ARE GREAT FOR AN OMLET THE NEXT MORNING!
