Yogurt Garlic Mashed Potatoes

Introduction

A quick and easy low fat recipe. I am being pretty loose with the prep time. How long does it take to peel and dice? How long does it take to mash? How many questions will the kid ask while you do it? A quick and easy low fat recipe. I am being pretty loose with the prep time. How long does it take to peel and dice? How long does it take to mash? How many questions will the kid ask while you do it?

Ingredients

    4 cups potatoes, peeled and cut into chunks
    1/2 cup milk
    2 tablespoons mince garlic
    1 1/2 cups plain yogurt
    Salt and pepper to taste

Directions

In a microwave-save dish, place potatoes and milk. Cover tightly and cook on high for about 12 minutes, potatoes should be tender but not mushy. In a separate bowl mix yogurt and garlic together.

When potatoes are done, remove from microwave. Add yogurt mixture and mash. Season with salt and pepper. Garnish with parsley.
