Banana Bran Chocolate chip muffins

Ingredients

    1 cup Fiber One® cereal
    1 egg
    3/4 cup fat-free (skim) milk
    3 tablespoons vegetable oil
    1 cup mashed ripe bananas (about 2 medium)
    1 cup all-purpose flour
    1/4 cup whole wheat flour
    1/2 cup brown sugar
    3 teaspoons baking powder
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/2 cup Ghirardelli chocolate chips
    2 teaspoons flax seed meal

Directions

1. Heat oven to 400°F. Grease bottoms only of mini muffin cups with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In medium bowl, beat egg, milk and oil with fork or wire whisk until well mixed; beat in bananas. Stir in cereal; let stand 5 minutes.
3. Stir in remaining ingredients except chocolate chips and flax seed until blended. Stir in chips. Divide batter evenly among muffin cups. Sprinkle tops with flax seed.
4. Bake 15 to 20 minutes or until light golden brown. Immediately remove from pan to cooling rack. Serve warm.

I usually fill one mini muffin pan and fill 3 holes in a regular pan and let my kids eat the larger servings.
