Clean-Eating Rhubarb Crisp (revised)

    1 lb (about 4 cups) sliced rhubarb
    1/4 cup sucanat (or brown sugar)
    1 tsp Cinnamon

    1/2 cup Quaker Old Fashioned Oats
    1/2 cup Whole Wheat Pastry Flour
    2 tsp sucanat
    1 tsp Cinnamon, ground
    1/4 cup Canola Oil

Mix topping ingredients together. Put into glass baking bowl.

Combine topping ingredients. Crumble on top of filling. Bake at 350 degrees for 40 minutes.

Makes 6 servings. Serve with yogurt dip - it's yummy!

    Even the kids loved it. I doubled the recipe, but not the sugar, instead I added a Tablespoon of ground Stevia leaves and a Tablespoon of vanilla. Yum! I also used virgin coconut oil and eggwhites in the topping. Thanks for the inspiration! - 6/5/08

  • This recipe is AMAZING. It had such a great tart rhubarb taste and then the crumble perfectly balanced it. I didn't do the yogurt dip but it was a tremendous hit at the BBQ. - 6/3/09
