3 cups Veggie sprial noodles (or your fav whole wheat noodles)
2 fresh red ripe tomatoes, cored, seeded and chopped
1 green onion, chopped
2 garlic cloves minced
3 boneless skinless chicken breasts
1/2 stick i can't beleive it's not butter light (halved)
1/4 cup flour
1/4 tsp dry mustard (optional)
1/2 cup parmesan cheese
1 1/2 cup skim nonfat milk
salt and pepper to taste
Meanwhile add half butter to medium skillet, over medium heat, and let melt. Add garlic. Add chicken breasts. Cook for 10 minutes or until no longer pink. Remove and chop chicken. Set aside.
Add other half butter left to pan, then add flour. let bubble for a minute or 2, then slowly add 1 cup of milk. Whisk together, until sauce starts to thicken. Add tomatoes and scallions. Let simmer for a few more minutes, continuing to whisk, adding more milk as sauce thickens until gone. Add parmesan cheese and salt and pepper and dry mustard if wanted. Continue to simmer until sauce is a nice thickness. Toss chicken in at the end to coat.
Pour over noodles and ENJOY!
