Stuffed Bell Peppers

Ingredients

8 - large bell peppers, any color, seeded and cut in half lenghtwise
1 can - diced tomatoes and green chilis
2 TBS - chopped fresh cilantro
2 - Jalapeno peppers chopped - do not remove seeds
4 - cloves garlic, finely miniced
8 oz - extra lean ground meat or turkey
8 oz - Hot ground breakfast sausage
2 cups - cooked brown rice
2 - eggs
5 - Green onions finely chopped
2 - small zucchini finely chopped
1 - large carrot finely chopped
1 cup - Fat Free Cheddar cheese
1 tsp - black pepper
Directions
1.) Preheat oven to 350 degrees
2.) Steam peppers over boiling water for 8-10 minutes, or until tender
3.) Brown hamburger meat and sausage in skillet, drain and rinse
4.) Combine all ingredients in a large bowl
5.) Spoon filling evenly into pepper halves; place in baking dish
6.) Cover tightly with foil
7.) Bake 45 minutes or until vegelables are tender
Makes 16 stuffed pepper halves. 2 Halves = 1 serving
You can make this kid friendly by stuffing tomatoes instead of peppers.
