HealthierLynn's Balsamic Chicken w/Mushrooms

Number of Servings: 4

Ingredients

    4 chicken breasts, boneless and skinless
    3 Tbsp. balsamic vinegar
    2 tsp. Dijon mustard
    1 large garlic clove, crushed
    8 oz. mushrooms, sliced
    1/3 c. Swanson 99% FF chicken broth
    1/ tsp. dried thyme, crumbled

Directions

Spray a skillet with nonstick spray and heat over medium high flame.

In a bowl, mix 2 Tbsp. of vinegar, mustard and garlic. Add chicken and turn to coat. Transfer chicken and marinade to skillet. Saute chicken until cooked through, 5-7 minutes on each side. Transfer chicken to a platter and keep warm.

Re-spray the skillet and saute the mushrooms for 1 minute. Add broth, thyme and remaining Tbsp. of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, approximately 2-3 minutes.

Serve chicken topped with mushrooms.
