Ingredients

    Ingredients:

    1 C Spinach, fresh,
    1/2 C Mushrooms, sliced
    2 TB Scallions, chopped
    1 slice Turkey breast meat diced
    1/2 C Great Egg-Spectations egg whites,
    1 TB Feta Cheese
    1 Tsp Asiago cheese,
    1 slice fat free sharp chedder slices
    Olive Oil spray



Directions

spary fry pan, sautee mushrooms and spinach till browned and wilted, add eggs and turkey, stir till nearly cooked, add scallions and cheeses, continue cooking till cooked way U like it. use salt and pepper if you desire. Tast reminds me of Spanakopita without the puff pastry. Turkey instead of Lamb for lower calories and fat.
