IntroductionGreat side dish. I serve it with grilled or broilled chicken or fish. Great side dish. I serve it with grilled or broilled chicken or fish.
2 cups chicken broth
1 cup long cooking brown rice
1 half sweet red pepper roasted and finely chopped
1 cup finely chopped fresh vegetables ( cauliflower, broccoli florets and carrots)
1/4 tsp thyme
1/4 tsp marjoram
1/4 tsp pepper blend
2 dashes Accent Seasoning
Bring chicken broth to a boil reduce heat and add rice, mixed fresh vegetables and roasted red pepper. Add spices and let simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with fork and serve.
Makes 4 servings.
