Rice Pilaf

Introduction

Great side dish. I serve it with grilled or broilled chicken or fish. Great side dish. I serve it with grilled or broilled chicken or fish.

Ingredients

    2 cups chicken broth
    1 cup long cooking brown rice
    1 half sweet red pepper roasted and finely chopped
    1 cup finely chopped fresh vegetables ( cauliflower, broccoli florets and carrots)
    1/4 tsp thyme
    1/4 tsp marjoram
    1/4 tsp pepper blend
    2 dashes Accent Seasoning

Directions

Brush outside of sweet red pepper with olive oil and roast skin side up until bubbly. Peel skin off and finely chop. Finely chop cauliflower, broccoli florets and carrots to make 1 cup.

Bring chicken broth to a boil reduce heat and add rice, mixed fresh vegetables and roasted red pepper. Add spices and let simmer for 15 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with fork and serve.

Makes 4 servings.
