Guiltless Picadillo

Introduction

Because it's not really picadillo if it doesn't have RAISINS!!!! Because it's not really picadillo if it doesn't have RAISINS!!!!
Number of Servings: 12

Ingredients

    1 TBL olive oil
    1 red onion, minced finely
    8 garlic cloves, minced
    6 bay leaves
    ½ lb 90% lean ground beef
    ½ lb lean ground turkey, (no skin)
    1 bag hamburger style soy crumbles
    1 14 1/2-ounce can diced tomatoes in juice
    3/4 cup golden raisins
    3/4 cup sliced salad olives
    1/4 cup tomato paste
    1 1/2 teaspoons apple cider vinegar
    1 teaspoon chili powder
    1/4 teaspoon cayenne pepper
    1 tsp cumin powder
    ½ teaspoon each salt and pepper

Directions

1. Heat oil in large skillet over medium-high heat.
2.Add onion, garlic, and bay leaves; sauté until onions is soft, about 5 minutes.
3. Add turkey, beef and soy crumbles; sauté until cooked, about 7 minutes.
4. Add all remaining ingredients.
5. Simmer until picadillo thickens, stirring occasionally, about 8 minutes.
