Carrot & Apple Slaw

Introduction

This is a nice change from regular cole slaw and makes a nice side dish for pork or chicken. Serving size 1/2 cup = 1 point. This is a nice change from regular cole slaw and makes a nice side dish for pork or chicken. Serving size 1/2 cup = 1 point.
Number of Servings: 4

Ingredients

    2 medium carrots, shredded
    1 medium apple, shredded
    1 1/2 oz raisins, (small box)
    1/4 cup fat free mayonnaise
    2 Tbs apple cider vinegar
    1 packet Splenda
    1/8 tsp salt & white pepper, to taste

Directions

Shred carrots & apple. Place in medium bowl with raisins. Mix together mayo, vinegar, Splenda, salt & pepper. Add to carrot mixture, stirring to coat well. Chill & serve.
Makes 4 - 1//2 cup servings.

  • Delish! I made this without the raisins as my family doesn't eat it. I also left out the splenda and boosted up the vinegar for extra tangy flavor. My family loved it!! There are only 3 people in my family, and my hubby *volunteered* to eat the last serving! - 9/3/12
