    1 can (8 ounces) crushed pineapple
    1/2 cup shortening
    1 cup packed brown sugar
    1 egg
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1-1/2 teaspoons baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1-1/2 cups powdered sugar


Drain pineapple, reserving 3 tablespoons juice. Set pineapple aside; set juice aside for frosting. In a mixing bowl, cream shortening and sugar. Add egg; mix well. Add pineapple and vanilla; mix well. Combine flour, baking powder, baking soda and salt; stir into the creamed mixture. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 325* for 12-15 minutes or until golden. Remove to wire racks to cool completely. For frosting, in a small bowl, combine powdered surgar with enough of the reserved pineapple juice to achieve a smooth spreading consistency. Frost cookies. Yield: 3 dozen
Note: If doubling recipe do not double frosting recipe- makes way too much icing. Also make sure that cookies are completely cooled or icing will melt and run off.

  • 1 cookie is 81 calories? I guess I don't see this as "low cal" - I think I may try to clean it up a bit by replacing out the oil and some of the other stuff.... nice starter recipe tho. - 1/31/10

  • i made these with smartbalance butter blend. The cookies came out more cake like but they tasted great without icing. in half of my batch i added little sweetened coconut and little ginger powder, good . - 12/25/09

  • These sound really yummy, but the recipe needs to be "cleaned" up a little for me and mine. I'm gonna try using coconut oil in place of shortening, along with whole wheat pastry flour, cane sugar and sea salt. I'll replace the egg with egg replacer and chia seed. - 6/4/08
