Introduction

This is a really hearty dish that goes well with mashed potatoes and steamed green beans.

To make it really low fat, leave overnight and skim any fat before reheating.

Number of Servings: 4

Ingredients

    4 Veal (Beef) Osso Bucco cuts or shanks
    2 Tblspn Wholegrain Flour
    Dash each of Salt and Black Pepper
    1 medium Onion, chopped
    1 medium Carrot, sliced
    1 clove Garlic, crushed
    2 Tsp Dry Basil
    1 Tblspn Dry Parsley
    1 large Bay Leaf
    2 Tspn Lemon Peel, grated
    1/4 cup Tomato Paste
    2 cups Water


Directions

Pre-heat oven to 300 deg F (150 deg )

Mix the flour, salt and pepper in a bag and toss meat portions to coat.

In a skillet, spray with canola spray and brown meat portions, place into casserole dish.

Spray skillet with canola spray and saute onion, carrot and garlic. Add all other ingredients and bring to the boil. Pour over meat portions, cover and cook for @2 hours or until tender.

Note: This would work well in a slow cooker. Prepare the same way and cook as per slow cooker instructions.
